Installing Linux

I want to switch from windows to linux (ubuntu). I have never used Linux before so I don’t know about the installation process therefore I am going to follow a yt tutorial. What I want so ask here is that I have one SSD (256 gigs) which I have only used for OS (windows 10) and installing programs and another Hard Disk (512 gigs) which holds almost all of my important data. Nearly my 400 gigs of important data is stored in the hard disk only. I don’t care about formatting the SSD but if the data of the Hard disk got wiped out then I will be f*****. So while installing ubuntu, will “Erase the disk and install ubuntu” option only erase the SSD or will it also erase the hard disk? Or is there any options where I can manually select the desired disk? I didn’t got my answer from the internet. And my be I could find the answer myself while doing the process but I am a bit scared if I end up doing something disastrous. Any expert here who can give me some answers?
