Considering all the plus and minus, the outskirts (hills) of Pokhara are ideal for you.
Even though there are offbeaten ‘better remote places’ like lamjung, mustang and jumla, those will be a little outback for you in terms of facilities.
But another strong option is Lumbini, if ‘peaceful area’ is your vibe. That area is really large, and birthplace of Buddha too. The only drawback is the hotness (during summer), so it will not be an issue right now.
There are other fun cities like Bharatpur (chitwan national park too) and Janakpur (birthplace of Sita goddess) as well. So, anywhere except kathmandu I would suggest.
It’s not because kathmandu is boring, but because you will see fair share of kathmandu enroute. So it’s wise to take flights to any of below cities, and explore nearby districts or regions.
Summary:
Good facilities area:
Pokhara (the most popular and good nightlife area)
Lumbini (peaceful area, with A LOT of arts)
Chitwan (Sauraha/Bharatpur – if you love being in nature)
Janakpur (absolutely different culture but little unhygienic generally)
Absolutely beautiful but you will have to adjust about facilities:
Jumla (cannot suggest this enough, just too beautiful with decent facilities)
Bardiya National park (cheaper alternative to Sauraha)
Ilam (you can explore Nepal and north India from there)
Swargadwari pyuthan district (meat is not allowed)

do the unthinkable and go the unconventional route. my suggestion is Taplejung, the eastern most part of Nepal.
It depends on your preference. If you want to avoid the cold winter, you should check out places in the plains in the south of Nepal. Places like Chitwan (Sauraha) or something less touristic like Bardiya is good if you like wildlife, flora-fauna. Winter brings wild animals out to bask in the sun so potentially a nice time to go there.
Or, if you just want to avoid the north European winter and still enjoy the cool Himalayan winter then go north. Most are suggesting Pokhara but you might want to avoid that. It is a city and a tourist trap. Yes it is fun for a few days but you don’t want to spend an entire winter there. If you’re coming to Nepal then go to the mountains. Manang, Dolpa, Sey Phoksundo, Kanjirowa.
As for rent, if you are a minimalist and want to live low key, with basic hot water and a meal, you get places for around €20-€30/night. If you want a bit of luxury then the max you’d be paying is €40/night.
You should take a place in the city, preferably Kathmandu. And go to the village places for a week or less after you decide properly. It’s not a good way to make decisions from afar without knowing your requirements properly.
Hi, I see you mentioned working from home so if you choose remote villages you might face connectivity issues. It would be good to choose city areas that are close to tourist destinations. These can be Pokhara, Dharan, Chitwan etc.
Whenever I had Internet issues, I used NCell hotspot and that was a good backup option.
Just search bandipur in YouTube. You will find your destination.
No traffic

Sight seeing
If you are planning to stay and enjoy the nature i would suggest bandipur for long stay.
In weekends you can visit pokhara , chitwan it’s in middle of both city.

Kathmandu is not that cold. About mid November, it gets a lil cold…predominantly when you are riding on a motorbike/scooter and the wind hits you. Pokhara is slightly warmer, allegedly. Pokhara gets hotter in the summer tho, but you did say winter was the timing. I hear Ktm begins warming in January, so it’s really only cold from mid-Nov to mid-Jan…. but again, only cold when you’re riding a motorbike/scooter. You can always go from Pokhara to and from Kathmandu too though.
Dharan.
Dhulikhel, near to Kathmandu and not that big of a town. Its a small town with all facilities available. Just around 30 km from Kathmandu if you need something.
If you want a pure village lifestyle I can rent you my ancestral home. (Arghakhanchi)
Go to Jumla, Humla, Very far west side so you could enjoy your stay in Nepal

I would suggest you to visit ghandruk it’s a village with great network connection but with complete disconnection to pollution and continuous honking of these city vehicles. It’s nearby pokhara you can get a direct bus to the base from pokhara to ghandruk village
For reference, you can take a room in some hotel for a day thn later on take a place to visit through the locals, they are really friendly places.
Also it’s a very off beat place

pokhara would be great for winter
Pokhara is a good option, although it is a city its much more chill compared to KTM. If you live in a place like Lakeside, you’re not far from nature and just a 15-20 minute walk can get you to a very peaceful and beautiful place away from the city whether it be somewhere around the lake or a hill.
My suggestion is Ilam
Advantages:
– Not too remote
– Friendly people + can speak english
– Naturally beautiful place rich in culture
– Good place to live in with low cost of living
Disadvantages:
– Little bit far from capital city
– (Not so) good healthcare
Pokhara village area, Lwang Ghalel area
