It’s old habits from most likely when their income was low. They developed a “savings” mentality and handle money in the same way as before, even though it’s plenty now. Or like everyone is saying, they might have seen someone showing off wealth get fked, asked for money or some other troubles which they don’t want to get into. Also, showing off money without power/connections is gonna attract predatory eyes so they are kinda right.
You too stupid to understand their game. Probably hoarding money for secured future is what your parents have in mind. “Aru le k bhancha” is their go-to excuse to achieve their goal. As you mentioned, you are well off but not rich.

I do not know your parents source of income but one thing i can say for such behaviour is relative may assume for corruption and they may complain to akhtiyaar because of jealousy.
I’ve seen this behaviour first hand and I kinda understand why they might do this.
My relatives are not as well of as us. We aren’t Cray rich either but we can afford to buy expensive items every now and then.
There are 2 mindsets afaik.
1. Don’t show off. More you spend on pricey things, relatives notice. There’s always a backhanded sarcasm about being rich or something like that. It’s like you’re being taunted but for having money. It also attracts attention which many people don’t like.
2. To better blend in. If you’re visibly richer than your relatives, it sometimes makes you an outcast. You might not blend in as good mostly for being unrelatable. (I don’t understand this because you’re the same person) I guess having a lot of money kinda intimidates other people.
Worse are those who show off. Aaankha ni lagdaina but yea sabai kura ma arule k bhancha bhanera chai basnu hunna.

We had a similar situtation but my family’s reasoning was you don’t wanna come off as you’re better than everybody else. we could have taken a plane,stayed at better hotels,ate at better restaurants than we did(also some other relatives could as well) but you don’t wanna make the relatives,who couldn’t afford those things, feel bad about it. You planned a trip together and the idea was to enjoy the trip together, not to remind people about their financial shortcomings.
We do all nice things when its just our family but whenever we plan something with extended family, we try to blend in and do things that is affordable by everyone.

And here me who spends money like flowing water 💦 😂😂…… my parents are strict too…. Specially my dad he buys nothing not even for himself …. His moto is like khane ho peune ho ani saving garne ho for upcoming gene 🧬…. But me …. The day of salary  i receive …. Nextday 0₹ 😎 Mero moto chai untill you’re not dead ni enjoy k… whatever you want get… if not save……. But i do saving too haii😏

But I think it’s because aankha lagcha bhanera. Most people believe this, most people don’t. I do believe it because I’ve had numerous experiences and seen other face it too.
Tara aankha lagcha bhanera darayo bhani pani imo jhan lagne garcha. Plus jati paisa lai tightly rakhyo, na ta outward flow huncha nata inwards.
These are all my beliefs. To each their own. But just assuming what your parents or most specifically your mom may be thinking.
I don’t know what they are thinking but it can be not show off mentality or may be relatives would ask for money or may be they are planning something bigger or they want children learn live on basics and necessity or they are kadarya (no offence, kadarya used to be title in nepali text book about a person who dont spend money when capable) or any other reason. It takes a lot to understand parents. I had hard time understanding untill 19. But don’t badmouth for the way they are.
Nothing bro you are rich, they are just trying to act normal.
